Choose and prepare rolls
Decide whether to serve all Ozzie rolls, all Best Buns, or an assortment. For an assortment, arrange 6 Ozzie rolls and 6 Best Buns on a cutting board or basket. If rolls are chilled, bring them to room temperature for 20–30 minutes before serving.
Warm the bread (optional)
Preheat oven to 350°F (175°C). Place the rolls on a baking sheet, cover loosely with foil to keep crusts soft, and warm for 7–10 minutes until just heated through. For a lightly crisp exterior, remove foil for the last 2 minutes. Remove from oven and transfer to a lined basket or serving platter.
Honey butter
Soften and whip butter
Remove unsalted butter from the refrigerator and let it sit at room temperature until very soft, about 30–45 minutes. Alternatively, cut butter into 1/2-inch cubes to speed softening (10–15 minutes at room temperature). Place the softened butter in a medium mixing bowl.
Combine ingredients
Add 3 tablespoons clear honey and 1 teaspoon sea salt to the softened butter. If using, add 1 teaspoon lemon zest and 1 teaspoon ground cinnamon. Using a hand mixer or stand mixer fitted with a paddle, whip on medium-high speed for 2–3 minutes until light, fluffy, and fully combined. Scrape down the sides of the bowl with a spatula to ensure even mixing.
Adjust sweetness and texture
Taste the honey butter and adjust: add up to 1 additional tablespoon honey if you prefer sweeter, or a pinch more salt to balance. If the butter is too soft, chill 10–15 minutes to firm slightly; if too firm, let it sit at room temperature 5–10 minutes before serving.
Transfer and finish
Spoon the honey butter into a small shallow serving dish or ramekin. Smooth the top with a spatula and create shallow swirls for presentation. Sprinkle a pinch of flaky sea salt over the top and drizzle 1–2 teaspoons of extra honey for shine. Garnish with a small parsley sprig if desired.
Garnish and serving
Arrange the warmed rolls in a basket or on a wooden board, covering them with a clean linen to retain warmth. Place the honey butter dish in the center or alongside. Add small spoons or butter knives for spreading.
For final touches, scatter the parsley sprigs around the basket and offer an extra small dish of honey for guests who want additional drizzle. Provide a small bowl of flaky sea salt nearby for those who enjoy a finish of texture and salt.
Serve immediately while rolls are warm. Reheat unused rolls wrapped in foil at 325°F (160°C) for 8–10 minutes before serving again.
