Prepare glass
Optional rim
If you want a salted rim, rub the lime wedge around the mug's rim, then dip the rim into the coarse or flaky sea salt to coat lightly.
Place the copper mug (or highball glass) on the counter and add the crushed ice to chill while you prepare the cocktail.
Build cocktail
Pour in 4 oz (approximately) Fever-Tree Ginger Beer gently over the back of the bar spoon (or directly) to retain carbonation. Give the drink one gentle stir — 1–2 turns with the bar spoon — to integrate flavors without flattening the ginger beer.
Finish & garnish
Top the mug with the chilled crushed ice if not already filled. Taste briefly and, if desired, add an extra 0.25–0.5 oz fresh lime juice to brighten.
Garnish with the mint leaves (slap once between your palms to release aroma) and a lime wheel or wedge on the rim.
Serve immediately with a short straw so the drink's aromas are experienced with each sip.
