Muddle

Place the fresh mint leaves (reserve one small sprig for garnish) and 2 tbs sugar into a sturdy highball glass or mixing glass. Add the lime wedges and freshly squeezed lime juice. Using a muddler or the back of a wooden spoon, gently press and twist the mint, lime and sugar together 8–10 times until the sugar begins to dissolve and the mint releases its aroma. Do not over-muddle to avoid bitter green flavors.

Fill the glass about three-quarters full with crushed ice (approximately 1 cup). Pour in 2 oz white rum directly over the muddled mixture. Stir the drink briskly with a bar spoon or regular spoon for about 10–15 seconds to chill and integrate the rum with the mint-sugar base.

Top the glass with approximately 3 oz chilled club soda to taste. Give one gentle up-and-down stir to combine soda without flattening carbonation.

Garnish with the reserved mint sprig and a lime wheel on the rim. To release extra aroma, clap the mint sprig lightly between your palms before placing it in the drink (this bruises the leaves slightly and releases essential oils). Serve immediately with a straw and enjoy.
