Prepare corn
If using raw corn on the cob, remove husks and silk. Bring a pot of water to a boil and blanch corn for 2 minutes, then transfer to an ice bath to cool. Once cool, stand each cob on end and cut kernels off with a sharp knife. If using raw kernels without blanching, cut from cob and proceed. Measure 1 cup kernels.
Prep vegetables and cheese
Quarter the cherry or grape tomatoes. Thinly slice scallions, including both white and green parts. Cube or shred the Tillamook white cheddar into small, bite-size pieces (about 3 oz).
Assemble salad
In a large bowl combine 6 cups mixed salad greens, 1 cup corn kernels, 1 cup quartered tomatoes, sliced scallions, and the cubed/shredded white cheddar. Toss gently to combine. Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper, then set aside until dressing is ready. Hold croutons separate until serving to keep them crisp.
Buttermilk Herb Dressing
In a medium bowl or a jar, whisk together 1/2 cup buttermilk, 1/4 cup mayonnaise and 2 tbsp plain Greek yogurt until smooth.
Add the herbs and flavorings: stir in 2 tbsp chopped parsley, 2 tbsp minced chives, 1 tbsp chopped dill, 1 tbsp lemon juice, 1 tsp olive oil, 1 minced garlic clove, and 1/2 tsp honey or maple syrup.
Season and adjust texture: add 1/4 tsp salt and 1/8 tsp freshly ground black pepper. Taste and adjust seasoning. If the dressing is too thick, thin with up to 2 tbsp additional buttermilk or a splash of cold water until desired consistency is reached.
Chill: refrigerate the dressing for at least 10 minutes to allow flavors to meld. Shake or whisk again before using.
To Serve
Dress and finish: just before serving, pour 3 to 4 tablespoons of the buttermilk herb dressing over the chopped salad and toss gently to coat evenly. Add more dressing to taste (reserve any extra in the fridge for up to 3 days).
