Form patties

Divide the ground beef into 4 equal portions (about 4 ounces each). Gently shape each portion into a patty about 3/4-inch thick and a little wider than the bun. Do not overwork the meat. Press a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

Season

Pat both sides of each patty dry with a paper towel. Sprinkle about 1/4 teaspoon kosher salt and a pinch of freshly ground black pepper on each side. Lightly brush one side of the patties with Worcestershire sauce (about 1/4 tsp per patty) before cooking.

Cook

Heat a cast-iron skillet or griddle over medium-high heat until shimmering (about 3–4 minutes). Add 1 tablespoon vegetable oil and spread. Place patties seasoned-side down and cook for 3–4 minutes without pressing. Flip and cook the second side 2–3 minutes for medium (adjust time for desired doneness).

Melt cheese

About 1 minute before the patties are done, place one slice of sharp cheddar on each patty. Cover the skillet with a lid or a large bowl for 30–60 seconds to trap steam and fully melt the cheese.

Toast buns

While patties cook, split the buns and spread softened butter on the cut sides (about 1/2 tablespoon per bun). Place cut sides down on a separate skillet or the same griddle over medium heat and toast until golden brown, about 1–2 minutes. Remove and keep warm.

Prepare condiments & produce

Mix or portion condiments: place 1 teaspoon mayonnaise, 1 teaspoon mustard, and 1 teaspoon ketchup on the underside of each top or bottom bun as preferred. Slice tomato into 4 even slices and separate lettuce leaves. Thinly slice the red onion into rings and set out pickle slices.

Assemble burgers

Place the bottom bun on a plate, add a lettuce leaf, then the cheddar-topped patty. Top the patty with 1–2 pickle slices, a tomato slice, and a few onion rings. Spread condiments on the top bun and close the burger. If using optional bacon, add 1 slice on top of the cheese before pickles. Serve immediately.

Bacon (if using)

Cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning as needed. Drain on paper towels. Add one slice to each burger just after cheese melts so it warms slightly before assembling.

Spicy option

If using jalapeño, scatter sliced jalapeño on top of the melted cheese before assembling, or add to taste on the finished burger.
