Cooking Instructions
1. Prepare the Pork
Rub the pork shank with salt, black pepper, cumin, and oregano. Ensure it's evenly coated.
2. Sauté Aromatics
In a large pot or Dutch oven, heat a bit of oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent.
3. Slow Cook the Pork
Add the seasoned pork shank to the pot with the sautéed aromatics. Pour in the lime juice and water. Bring to a simmer, cover, and reduce heat to low. Cook for about 3-4 hours or until the meat is tender and can be easily pulled apart.
4. Shred the Pork
Once the pork is cooked, remove it from the pot and let it rest for a few minutes. Shred the meat using two forks.
5. Serve
Serve the shredded Kurobuta carnitas with ancho rice, black beans, guacamole, pico de gallo, salsa, and warm tortillas.
