    Prepare the Noodles

    Soak the Thai rice noodles in hot water for about 20 minutes or until they are soft. Drain and set aside.

    Prep the Vegetables

    While the noodles are soaking, chop the broccolini, carrot, bok choy, oyster mushrooms, and scallion. Cut the carrot into thin strips.

    Stir-Fry the Vegetables

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chopped broccolini, carrot, bok choy, and mushrooms. Stir-fry for about 5 minutes until the vegetables are tender.

    Combine Noodles and Sauce

    Add the soaked noodles to the skillet with the vegetables. Pour in the soy sauce, chili sauce, salt, and black pepper. Toss everything together until well combined and heated through, about 3-5 minutes.

    Garnish and Serve

    Remove from heat and garnish with chopped scallions. Serve hot and enjoy your spicy fried Thai rice noodles!
