    Cook the Basmati Rice

    Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed. Fluff with a fork and set aside.

    Prepare the Vegetables

    Thinly slice the cucumber, red cabbage, and daikon radish. Grate the carrot. In a bowl, combine the sliced cucumber, red cabbage, daikon, kimchi, grated carrot, and edamame.

    Marinate the Salmon

    In a bowl, mix soy sauce and citrus juice. Add the salmon filet and marinate for at least 15 minutes.

    Grill the Salmon

    Preheat a grill or grill pan over medium heat. Grill the marinated salmon for about 4-5 minutes on each side or until cooked through. Remove from heat and let it rest.

    Assemble the Bowl

    In a serving bowl, layer the cooked basmati rice, followed by the mixed vegetables and kimchi. Top with the grilled salmon filet and drizzle with ponzu sauce and spicy cilantro sauce.
