Can’t decide between the filet and the strip? How about both rolled into one magnificent slab of beef? Topped with a gouda-bacon-scallion butter. A little bit pricey? Yeah. Worth it? Absolutely. Twenty two ounces.

Cooking Instructions

  1. 1

    Prepare the Butter

In a mixing bowl, combine the softened unsalted butter, shredded gouda cheese, crumbled bacon, chopped scallions, minced garlic, Worcestershire sauce, and chopped parsley. Mix well until all ingredients are evenly incorporated. Transfer the mixture onto a piece of plastic wrap, shape it into a log, and refrigerate until firm.

  2. 2

    Prepare the Steak

Remove the porterhouse steak from the refrigerator and allow it to come to room temperature for about 30 minutes. Preheat your grill or cast-iron skillet over high heat. Season the steak generously with salt and black pepper on both sides.

  3. 3

    Cook the Steak

Once the grill or skillet is hot, place the steak on it. Cook for about 4-5 minutes on one side without moving it, until a nice crust forms. Flip the steak and cook for another 4-5 minutes for medium-rare. Adjust cooking time for your desired doneness.

  4. 4

    Rest the Steak

Remove the steak from the heat and let it rest for about 10 minutes to allow the juices to redistribute.

  5. 5

    Serve

Slice the steak and serve it topped with slices of the gouda-bacon-scallion butter. Enjoy your magnificent porterhouse!
