    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deep golden brown and caramelized, about 30-40 minutes.

    Add Garlic and Deglaze

    Add the minced garlic to the pot and cook for an additional 1-2 minutes. Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Add Broth and Season

    Stir in the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer and let it cook for 20-30 minutes. Adjust seasoning to taste.

    Prepare the Croutons

    While the soup simmers, preheat the oven to 350°F (175°C). Arrange baguette slices on a baking sheet and toast in the oven until golden brown, about 10 minutes.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each bowl with toasted baguette slices, and sprinkle generously with Gruyère cheese.

    Place the bowls under the broiler for 2-3 minutes or until the cheese is bubbly and golden brown. Serve hot.
