    Prepare the Steak

    Take the ribeye steak out of the refrigerator and let it come to room temperature for about 30 minutes. Season generously with salt and black pepper on both sides.

    Sear the Steak

    In a large cast-iron skillet, heat the olive oil over high heat until shimmering. Add the ribeye steak to the skillet and sear for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for 10 minutes before slicing.

    Make the Red Wine Demi Sauce

    In the same skillet, lower the heat to medium and add the minced shallots. Sauté for about 2 minutes until translucent. Pour in the red wine and beef stock, scraping the bottom of the skillet to deglaze. Let it simmer until reduced by half, about 10 minutes.

    Finish the Sauce

    Whisk in the butter until melted and smooth. Season with salt and pepper to taste.

    Slice the ribeye steak and serve it topped with the red wine demi sauce.
