Fry the Bologna

In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the bologna slices and cook for about 3-4 minutes on each side until they are browned and crispy.

Toast the Bread

While the bologna is frying, spread butter on one side of each slice of sourdough bread. In another skillet or using the same skillet after the bologna is done, toast the bread butter-side down until golden brown.

Melt the Cheese

Once the bread is toasted, place a slice of American cheese on top of the bologna in the skillet. Cover with a lid for about 1 minute or until the cheese is melted.

Assemble the Sandwich

Spread spicy mustard on the non-buttered side of the toasted sourdough slices. Place the bologna and melted cheese on one slice and top with the other slice to complete the sandwich.

Serve

Cut the sandwich in half if desired and serve immediately while hot.
