Make the Tart Crust
In a mixing bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and blend until the mixture resembles coarse crumbs. Press the mixture into a tart pan, covering the bottom and sides evenly. Prick the bottom with a fork.
Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and let it cool.
Prepare the Lemon Filling
In a separate bowl, whisk together the eggs and granulated sugar until light and fluffy. Add the fresh lemon juice and lemon zest, and mix until well combined.
Bake the Tart
Pour the lemon filling into the cooled tart crust. Bake for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch. Remove from the oven and let it cool completely.
Make the Vanilla Chantilly Cream
In a mixing bowl, combine the heavy cream and vanilla extract. Whip until soft peaks form. Serve the lemon tart chilled with a dollop of vanilla Chantilly cream on top.
