Method

Prepare Sweet Potato Fries

Preheat Oven

Preheat the oven to 425°F (220°C).

Cut and Season

Peel and cut sweet potatoes into fries. Toss with olive oil, salt, and paprika.

Bake

Spread sweet potato fries on a baking sheet and bake for 25-30 minutes or until crispy, flipping halfway through.

Prepare Garlic Aioli

Mix Ingredients

In a bowl, combine mayonnaise, minced garlic, and lemon juice. Mix well and set aside.

Grill Mushrooms and Vegetables

Marinate Mushrooms

Brush portobello mushrooms with lemon oil and let them marinate for 15 minutes.

Grill Vegetables

Slice zucchini and yellow squash. Grill the marinated mushrooms and sliced vegetables until tender.

Assemble Sandwich

Layer Ingredients

On a slice of focaccia bread, spread pesto sauce, add grilled mushrooms, roasted red peppers, tomato slices, and arugula.

Spread garlic aioli on the other slice of focaccia and place it on top to complete the sandwich.
