Preparing the Mushroom Cognac Sauce
Make the Sauce
In the same skillet, add sliced mushrooms and minced garlic. Sauté until mushrooms are browned, about 5 minutes. Add cognac and let it reduce for 1-2 minutes. Stir in heavy cream and Dijon mustard, simmer until slightly thickened. Add chopped parsley and season with salt and pepper to taste.
Cooking the Parmesan French Fries
Bake the Fries
Prepare frozen french fries according to package instructions. Once baked, toss with grated parmesan cheese, Italian seasoning, and salt before serving.
