Cooking the Filet Medallions

Sear the Filets

Season the beef filet medallions with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the medallions for 3-4 minutes on each side or until they reach your desired doneness. Remove from skillet and let rest.

Preparing the Mushroom Cognac Sauce

Make the Sauce

In the same skillet, add sliced mushrooms and minced garlic. Sauté until mushrooms are browned, about 5 minutes. Add cognac and let it reduce for 1-2 minutes. Stir in heavy cream and Dijon mustard, simmer until slightly thickened. Add chopped parsley and season with salt and pepper to taste.

Prepare frozen french fries according to package instructions. Once baked, toss with grated parmesan cheese, Italian seasoning, and salt before serving.
