Sandwich — per sandwich

    Prepare bread

    Lightly butter one side of each sourdough slice with the optional unsalted butter if using. Heat a skillet or griddle over medium heat until hot. Toast the buttered sides of the sourdough slices in the skillet, 2–3 minutes per side, until golden brown and crisp. Remove and place toasted sides up on a clean work surface.

    Spread mayo

    Evenly spread 1 tablespoon mayonnaise on the top (inside) of each toasted slice of sourdough. This creates a barrier to keep the bread from becoming soggy.

    Assemble lettuce and tomato

    Place the lettuce leaves on one slice of the bread over the mayo. Lay the tomato slices on top of the lettuce. Lightly season the tomato with 1/8 teaspoon kosher salt and a pinch (about 1/16 teaspoon) of freshly ground black pepper.

    Add turkey and cheese

    Layer the thinly sliced turkey evenly on top of the seasoned tomato. Place the Swiss cheese slice over the turkey so it sits between the turkey and bacon layer.

    Add bacon and finish

    Arrange the two crisp bacon strips on top of the Swiss cheese. Top with the second slice of toasted sourdough, mayo side down, to complete the sandwich.

    Optional press and slice

    If desired, press the sandwich lightly in the skillet for 30–45 seconds over very low heat (cheese will soften but not fully melt). Transfer to a cutting board and cut the sandwich in half diagonally. Serve immediately.
