Prepare steak
Trim excess fat from the steak and pat dry. Cut into roughly 1-inch bite-sized cubes so they cook evenly.

Make teriyaki marinade
In a medium bowl whisk together soy sauce, mirin, brown sugar, rice vinegar, grated ginger, minced garlic, sesame oil and freshly ground black pepper until sugar dissolves.

Marinate steak
Place the steak cubes in a resealable plastic bag or a shallow dish. Pour about 3/4 of the prepared teriyaki marinade over the steak (reserve roughly 1/4 for glazing/finishing). Seal or cover and refrigerate for at least 30 minutes and up to 4 hours. Agitate occasionally so pieces marinate evenly.

Make slurry and finish sauce
Pour the reserved marinade into a small saucepan and bring to a gentle simmer over medium heat. Mix cornstarch with 1 tablespoon water to make a slurry, then whisk into the simmering sauce. Cook 1–2 minutes until slightly thickened. Remove from heat and let cool slightly. This is your glaze to brush on the cooked steak.

Cook steak tidbits
Remove steak from the marinade and let excess drip off. Arrange steak cubes on the hot grill or in a single layer in the skillet without crowding. Cook for 2–3 minutes per side, turning so each side gets a slight char—total cook time about 6–8 minutes depending on cube size and desired doneness (medium-rare to medium). Use tongs to rotate pieces for even browning.

Garnish and serve
Transfer the tidbits to a serving plate. Sprinkle with toasted sesame seeds, sliced green onions and optional chili flakes. Serve hot as an appetizer or over steamed rice or a salad.
