Prep produce
Slice the tomato into 4 thin rounds. Rinse and dry lettuce leaves and stack them so they fit neatly inside the tortillas. Halve the avocado, remove the pit, then scoop into a bowl and slice or mash gently depending on preference (sliced for texture, mashed for spread). If mashing, toss with 1/4 tsp of the salt and all of the lemon juice to prevent browning and season lightly.

Lay out tortillas
Lay the 4 flour tortillas on a clean work surface. Lightly brush one side of each tortilla with the extra-virgin olive oil—this will help them brown when grilled.

Assemble fillings
Spread about 1 tablespoon of the mayonnaise mixture (see Sauce & crunch) onto the center of each tortilla. Place a few lettuce leaves down, then divide the roasted turkey evenly (about 2 oz per wrap). Top turkey with a slice of Swiss cheese, 2–3 tomato slices per wrap, and a generous portion of avocado (about 1/4 of the avocado per wrap if sliced, or 2–3 tablespoons if mashed). Sprinkle about 1/4 cup of tortilla strips over the avocado for crunch.

Make the mayo dressing
In a small bowl, combine the mayonnaise, remaining 3/4 tsp salt, the remaining lemon juice (if any left), and the black pepper. Stir until smooth and taste; adjust salt and pepper as needed. This yields about 4 tablespoons—use approximately 1 tablespoon per wrap.

Prepare tortilla strips (if making from scratch)
If you are using store-bought tortilla strips, skip this step. To make from corn tortillas: stack 2–3 corn tortillas, cut into thin strips, toss with 1 teaspoon olive oil and a pinch of salt, spread on a baking sheet, and bake at 375°F (190°C) for 8–10 minutes, stirring once, until crisp and lightly golden. Cool before using.

Grill the wraps
Heat a large skillet or flat top over medium heat. Place each assembled tortilla seam-side down onto the skillet and press gently with a spatula. Cook 2–3 minutes per side, or until the tortilla is golden and the Swiss cheese has softened. If your skillet is small, grill in batches. Optionally, cover the skillet briefly to help melt the cheese.

Finish and serve
Remove wraps from the skillet and let rest 1 minute. Slice each wrap in half on the diagonal. Serve immediately so the tortilla strips remain crunchy. Offer extra mayo on the side if desired.
