    Form patties

    Divide the ground beef into a single 5-ounce portion (approximately 142 g). Lightly shape into a round patty about 3.5 inches (9 cm) in diameter and about 1/2 inch (1.3 cm) thick, handling the meat as little as possible to keep it tender. Make a shallow 1/4-inch indentation in the center with your thumb to reduce puffing while cooking.

    Season

    Season both sides of the patty with about 1/4 teaspoon fine sea salt and a pinch (about 1/8 teaspoon) freshly ground black pepper. Set aside for 5 minutes at room temperature while you heat the pan.

    Cook patty

    Heat a heavy skillet or griddle over medium-high heat until hot (about 2–3 minutes). Add 1/2 tablespoon neutral oil and swirl to coat. Place the patty on the hot surface and cook undisturbed for 3 minutes. Flip once and immediately place a slice of mild cheddar on top of the cooked side. Continue cooking for another 2–3 minutes for medium doneness (adjust time +/- 1 minute for preference). Internal temperature should reach 160°F (71°C) for ground beef per food-safety guidelines for children.

Assembly & Toppings

    Toast bun

    While the patty finishes cooking, spread 1/2 tablespoon softened unsalted butter evenly on the cut sides of the brioche bun. Place the buns cut-side down on a separate skillet over medium heat or on the griddle for 30–60 seconds, until golden and lightly crisp. Remove and keep warm.

    Sauce & toppings

    Spread 1 teaspoon ketchup on the bottom bun and 1/2 teaspoon yellow mustard on top of the ketchup (adjust to taste). If using, place 3 pickle slices and about 1/4 cup shredded lettuce on the bottom bun.

    Assemble burger

    Transfer the hot patty with melted cheddar onto the prepared bottom bun. Top with the toasted top bun. Serve immediately while warm. Provide extra ketchup on the side if desired.
