Crab Cakes

Prepare crab meat
Inspect the jumbo lump crab meat and gently pick through to remove any shells. Place the meat into a large bowl and keep lumps as intact as possible for texture.

Make binding mixture
In a separate bowl whisk together 1/2 cup mayonnaise, 1 large egg, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon Old Bay seasoning, 2 tablespoons chopped parsley, 2 tablespoons chopped green onion, 1 tablespoon lemon juice, 1/2 teaspoon sea salt and 1/4 teaspoon black pepper until smooth and homogeneous.

Combine crab and crumbs
Gently fold the panko breadcrumbs (1 cup) into the binding mixture just until combined. Add the crab meat to the mixture and fold carefully to coat the crab without breaking up the lumps. Do not overwork — you want visible chunks of crab.

Form patties
Using a 1/3-cup measure (or by weight), portion the mixture into 8 equal portions for small/medium cakes or 6 for larger cakes. Gently shape each portion into a compact round patty about 3/4 to 1-inch thick. Place formed patties on a parchment-lined tray. Cover loosely and chill in the refrigerator for 30 minutes to firm.

Set up dredging station
Place 1/2 cup all-purpose flour in a shallow dish. In a second dish beat 2 large eggs until uniform. Place 1 cup panko breadcrumbs in a third shallow dish. One at a time, dredge chilled patties: light dusting in flour (shake off excess), dip into beaten egg (allow excess to drip), then press into panko breadcrumbs to coat evenly. For a lighter coating, press gently rather than aggressively. Return coated cakes to the tray and refrigerate 10 minutes to set the coating.

Heat oil
Pour about 3 to 4 cups of neutral oil (canola/vegetable) into a deep, heavy skillet or Dutch oven to a depth of about 1 to 1.5 inches. Heat oil over medium-high until it reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test by dropping a small pinch of panko — it should sizzle and brown in about 30–45 seconds.

Fry crab cakes
Working in batches so as not to crowd the pan, carefully lower the coated crab cakes into the hot oil using a spatula. Fry 2–3 minutes per side until golden brown and crisp. Maintain oil temperature at roughly 330–350°F; reduce heat slightly if browning too fast. Use a slotted spatula to turn; drain on a wire rack set over a baking sheet or on paper towels briefly.

Finish and rest
If cooking multiple batches, keep finished cakes warm in a 200°F (95°C) oven on a baking sheet while you finish frying the rest. Let crab cakes rest 2–3 minutes before serving so juices redistribute.
Chipotle Sauce

While crab cakes chill or fry, combine 1/2 cup mayonnaise, 1 teaspoon finely minced chipotle in adobo, 1 teaspoon adobo sauce, 1 tablespoon fresh lime juice, 1/2 teaspoon honey, 1/4 teaspoon smoked paprika, 1/8 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl. Whisk until smooth and taste; adjust heat by adding more adobo or a pinch of sugar/honey to balance. Refrigerate until ready to serve.
Plating

Place 2 crab cakes per plate (or as desired). Spoon a generous tablespoon of chipotle sauce alongside or place a small dollop on top. Garnish with lemon wedges and microgreens or chopped parsley. Serve immediately so the crust remains crisp.
