Method

Chicken

  1. 1

    Pound and season

If the chicken breasts are uneven in thickness, place each between two pieces of plastic wrap and gently pound to an even 3/4-inch thickness. Pat dry with paper towels.

  2. 2

In a small bowl combine olive oil, garlic powder, kosher salt, black pepper, and lemon juice. Brush or rub the mixture evenly over both sides of each chicken breast.

  3. 3

Preheat a grill or grill pan over medium-high heat (about 400°F / 200°C). Oil the grill grates or brush the pan with a little oil to prevent sticking.

  4. 4

Grill the chicken 4–6 minutes per side, until the internal temperature reaches 165°F (74°C) and the exterior has good grill marks. Cooking time will vary by thickness.

  5. 5

Transfer the chicken to a cutting board and let rest for 5 minutes, then slice into 1/4-inch strips against the grain.

Wrap components

  1. 6

While the chicken rests, warm the tortillas briefly: place each on the grill or in a dry skillet 10–20 seconds per side until pliable and lightly toasted. Keep warm under a clean towel.

  2. 7

In a large bowl combine the chopped romaine, grated Parmesan, crushed croutons, and Caesar dressing. Toss gently until lettuce is evenly coated. Taste and adjust seasoning with additional black pepper or salt if needed.

  3. 8

Lay a warmed tortilla flat. Spoon approximately 1 cup of the dressed romaine mixture down the center of each tortilla, leaving about 1.5 inches clear at the top and bottom for folding.

  4. 9

Top the lettuce with an even portion of sliced grilled chicken (about 4–5 strips per wrap) and a sprinkle of extra Parmesan and cracked black pepper if desired.

  5. 10

Fold the bottom edge of the tortilla up over the filling, fold the sides in, then roll tightly away from you to form a wrap. Repeat for remaining tortillas.

  6. 11

If you prefer a warm, sealed wrap, place the rolled wraps seam-side down in a skillet or on the grill over medium heat for 1–2 minutes per side until lightly golden and sealed.

Serving

  1. 12

Slice each wrap in half on a diagonal and serve immediately with lemon wedges on the side for squeezing over the chicken.

  2. 13

Serve extra Caesar dressing on the side if desired for dipping.
