    Prepare the onions

    Peel the sweet onions and slice into 1/2- to 3/4-inch thick rounds. Separate into individual rings and set aside on a tray. Reserve any small inner rings for snacking or additional battering.

    Dry dredge

    Place 1 cup all-purpose flour in a wide shallow bowl. Toss the onion rings in the flour to coat lightly; shake off excess. This dry coating helps the batter adhere.

    Make the beer batter

    In a medium bowl whisk together 1/2 cup flour, 1/2 cup cornmeal, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. In a separate bowl whisk the egg and 1/4 cup buttermilk until combined. Gradually whisk in 1 cup cold beer into the egg mixture, then fold the wet mixture into the dry ingredients until a thick, smooth batter forms. If batter seems too thick to coat, add up to 2 tablespoons more beer. Batter should cling to a spoon but still flow slightly.

    Prepare crumb mixture

    In a shallow dish combine 1.5 cups panko breadcrumbs and 1/4 cup finely grated Parmesan. Season with 1/4 tsp salt and a pinch of black pepper and mix well.

    Heat the oil

    Pour 4 cups vegetable oil into a heavy, deep skillet or Dutch oven to a depth of about 1.5–2 inches. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter: it should sizzle and rise steadily without burning.

    Batter and crumb the rings

    Working in small batches (3–4 rings at a time), dredge the floured onion rings briefly back into the remaining 1/2 cup flour to remove excess moisture, then dip into the beer batter, letting excess drip off for 2–3 seconds. Transfer each battered ring into the panko-Parmesan crumbs and press gently so crumbs adhere evenly on both sides. Set coated rings on a wire rack while you finish the rest.

    Fry

    Carefully lower 3–4 coated rings into the preheated oil. Fry, turning once, until golden brown and crisp, about 2.5–3.5 minutes per batch depending on thickness. Maintain oil temperature around 350°F; adjust heat as needed. Use a slotted spoon or spider to remove rings and drain on a wire rack set over a baking sheet (not on paper towels, which can make them soggy). Immediately sprinkle with a light pinch of salt.

    Finish

    Repeat with remaining rings. Let the rings rest 1–2 minutes to crisp further before serving. If making ahead briefly, keep in a single layer on a warm oven tray at 200°F (95°C) for up to 15 minutes; do not stack.

Bleu Cheese Dressing

    In a medium bowl whisk together 1/2 cup mayonnaise, 1/4 cup sour cream, and 1/4 cup buttermilk until smooth. Stir in 1/2 cup crumbled bleu cheese, 1 tablespoon lemon juice, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon minced garlic, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust thickness with additional buttermilk (1 teaspoon at a time) and seasoning if needed. For a smoother dressing, blend briefly with an immersion blender or pulse in a food processor, leaving some chunks of bleu cheese for texture. Chill until ready to serve.

Finishing & Serving

    Arrange the hot crumb onion rings on a platter. Sprinkle with chopped fresh parsley and extra crumbled bleu cheese if using. Serve immediately with bleu cheese dressing on the side and lemon wedges for squeezing. Recommend serving 3–4 rings per person as an appetizer, or 6–8 as part of a shared plate.
