Hamburger Steak

Bring meat to cool room temperature
Remove the 10 oz freshly ground beef from the refrigerator and let it rest, covered, at cool room temperature for 10–15 minutes. This helps the steak cook evenly—do not let it sit out more than 30 minutes.

Season and mix
Place the ground beef in a bowl. Sprinkle kosher salt (1/2 tsp), black pepper (1/4 tsp), garlic powder (1/4 tsp), onion powder (1/4 tsp), and Worcestershire sauce (1/2 tbs) over the meat. Gently fold the seasonings into the meat 6–8 times using your fingers or a spatula; avoid overworking so the patty stays tender.

Form the patty
Shape the seasoned meat into a single patty about 3/4" to 1" thick and roughly 3.5–4" in diameter. Make a shallow 1/4"-deep indentation across the center with your thumb to help it cook flat and reduce doming.

Preheat pan
Heat a heavy skillet (cast iron recommended) over medium-high heat until hot, about 2–3 minutes. Add 1 tsp neutral oil and swirl to coat the surface.

Sear the patty
Place the patty in the hot skillet. Sear without moving for 2.5–3 minutes, until a deep brown crust forms on the bottom.

Flip and finish
Flip the patty and reduce heat to medium. Add 1 tbs unsalted butter to the pan and tilt the pan, spooning melted butter over the top of the patty for 1.5–3 minutes, depending on desired doneness: about 2 minutes for medium-rare–medium (internal temperature 130–140°F / 54–60°C). Cook longer if you prefer well-done.

Rest
Transfer the hamburger steak to a plate and let rest for 4–5 minutes. Resting allows juices to redistribute.

Finish and serve
If using, sprinkle chopped fresh parsley (1 tbs) over the steak and serve with mustard or steak sauce (1 tbs) and an optional lemon wedge. Serve hot.
