Waffle Batter

Preheat
Preheat your Belgian waffle iron according to manufacturer instructions. Lightly grease if recommended.

In a large bowl whisk together the flour, sugar, baking powder, and salt until evenly mixed.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine. Let the batter rest 5 minutes while you finish prep.
Country Potatoes

While the waffle iron is preheating, place a large skillet over medium-high heat and add the olive oil. When shimmering, add the diced potatoes in a single layer if possible.

Meat (Bacon or Sausage)

If using bacon: Arrange bacon in a cold skillet, then place over medium heat and cook, turning occasionally, until crisped to your liking, 8–12 minutes. Transfer to paper towels to drain and keep warm in a low oven.

If using sausages: In a skillet over medium heat, cook sausages, turning occasionally, until browned and fully cooked through (internal temperature 160°F / 71°C), about 10–12 minutes. Keep warm.

Close the lid and cook until golden brown and crisp, typically 4–6 minutes depending on your iron. Do not open frequently. Repeat with remaining batter. Transfer finished waffles to a wire rack in a low oven to keep crisp while you finish remaining items.
Eggs

About 5 minutes before serving, heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Crack two eggs into the skillet and cook to your preference: for sunny-side-up, cover and cook 3–4 minutes until whites are set; for over-easy, cook uncovered 2–3 minutes, flip gently and cook 20–30 seconds more.

Season eggs with 1/4 teaspoon salt and a pinch of black pepper. Remove from heat and keep warm.

Add your choice of three strips of bacon or two sausages to each plate. Serve maple syrup on the side for drizzling over waffles.
