Prepare the Sauce
In a large skillet, melt the butter over medium heat. Add the minced garlic and diced shallots, sautéing until translucent, about 3-4 minutes.
Stir in the tomato paste and cook for another 2 minutes, allowing the flavors to meld.
Pour in the coconut milk, lemon juice, cayenne pepper, paprika, salt, and black pepper. Mix well and bring to a gentle simmer.
Add the Crawfish
Once the sauce is simmering, add the crawfish tails to the skillet. Stir to coat the crawfish in the sauce and cook for about 5-7 minutes, or until heated through.
Taste and adjust seasoning if necessary.
Remove from heat and stir in the chopped green onions.
Serve
Serve the crawfish in shambalang sauce over rice or with crusty bread to soak up the delicious sauce.
