    Chill glass

    Place a coupe or Nick & Nora glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to properly chill it.

    Combine ingredients

    In a mixing glass, add 2 oz Old Tom gin, 1 oz Cocchi di Torino, 0.25 oz Maraschino liqueur, 2 dashes Angostura bitters, and 1 dash orange bitters (optional).

    Add ice and stir

    Fill the mixing glass with large, fresh ice. Stir briskly but smoothly for about 30–45 seconds (20–30 full strokes) until the mixture is well chilled, slightly diluted, and the mixing glass is cold to the touch.

    Strain

    Discard ice or water from your chilled serving glass. Double-strain the cocktail from the mixing glass into the chilled coupe or Nick & Nora using a Hawthorne and fine strainer (or just a julep/tea strainer) to catch any small chips of ice.

Garnish & finish

    Express the oils of a fresh lemon twist over the cocktail by holding the twist over the glass, skin-side down, and giving it a quick pinch to release the oils. Run the twist around the rim of the glass, then drop it into the drink.

    Serve immediately and enjoy.
