Method
Prepare Mignonette

Combine ingredients
In a small bowl, combine 1/4 cup red wine vinegar and 2 tablespoons dry white wine. Add the very finely minced shallot, finely minced ginger, and 1/2 teaspoon finely grated lime zest. Stir to combine.

Season and balance
Add 1 tablespoon simple syrup, 1/4 teaspoon sea salt, and 1/8 teaspoon freshly ground black pepper. Taste and adjust sweetness or acidity as needed: the mignonette should be bright, slightly sweet, and balanced to complement oysters, not overpower them.

Finish and chill
Stir in 1 tablespoon finely chopped fresh chives. Cover and refrigerate for at least 20 minutes to allow flavors to meld. Can be made up to 6 hours ahead and kept chilled.
Prepare Garnish Oil

In a small ramekin, combine 1 teaspoon mild extra-virgin olive oil with 1/4 teaspoon toasted sesame oil and, if using, 1/8 teaspoon microplane yuzu or lime. Whisk briefly and set aside at room temperature. This adds a subtle aromatic sheen to finish each oyster.
Shuck & Serve Oysters

Clean and chill
Rinse the oyster shells under cold running water to remove grit. Fill a wide, shallow platter with crushed ice to create a stable cold bed for the oysters.

Shuck oysters
Using an oyster knife and protective towel or glove, hold an oyster flat-side up. Insert the knife at the hinge and twist gently until it pops. Run the knife along the top shell to sever the muscle and remove the top shell. Slide the knife under the oyster to free it from the bottom shell, leaving the oyster resting in its liquor. Repeat for all oysters. Discard top shells and nestle oysters in the crushed ice, liquor-side up.

Finish each oyster
For each oyster, spoon about 1/2 teaspoon of the chilled Little Moon mignonette onto the oyster meat (adjust to taste). Add a tiny drizzle β about 1/8 teaspoon β of the garnish oil on top to add aroma. Optionally squeeze a small drop of lemon over a few oysters if desired.

Serve
Serve immediately while oysters are cold and fresh. Provide small forks and napkins. Uneaten shucked oysters should not be left at room temperature more than 2 hours.
