Oyster Loaf

Preheat oven to 350°F (175°C). Using a serrated knife, slice the loaf lengthwise but not completely through so it opens like a book, leaving the bottom crust intact. Hollow out most of the soft interior crumb leaving about a 3/4–1 inch shell; reserve removed bread for another use (breadcrumbs or stuffing). Spread 2 tbs softened butter evenly inside the hollowed loaf and on the cut surfaces. Wrap in foil and warm in the oven for 10 minutes so the bread is lightly toasted and butter is absorbed; keep warm.

Rinse oysters briefly in cold water and drain in a colander. Pat each oyster dry with paper towels to remove excess moisture (important for good breading adhesion).

Set up dredging station
In three shallow bowls or trays: (1) whisk the eggs into the buttermilk and season with 1/2 tsp salt and 1/4 tsp black pepper; (2) combine the 1 cup all-purpose flour with 1/4 tsp salt; (3) mix the cornmeal(s), baking powder, cayenne, and remaining 1/2 tsp salt and 1/4 tsp black pepper. Label them in order: flour, egg-buttermilk, cornmeal.

Heat a heavy, deep skillet or Dutch oven with 3–4 cups vegetable oil to 350°F (175°C). Use a thermometer to maintain temperature.

Working in batches to avoid crowding, dredge each oyster first in flour (shake off excess), then dip into the egg-buttermilk mixture letting excess drip off, then press into the cornmeal mixture to coat completely. Transfer breaded oysters to a wire rack while you finish the rest—this keeps the coating from getting soggy.

When oil reaches 350°F, carefully lower several oysters (do not overcrowd) into the hot oil. Fry until golden brown and crisp, about 2–3 minutes per side depending on oyster size. Use a slotted spoon to transfer fried oysters to a paper towel-lined tray or wire rack to drain. Keep fried oysters warm in a 200°F (95°C) oven while you finish remaining batches.

After frying all oysters, if oil has cooled, reheat to 350°F for any final crisping (optional). Taste one and adjust seasoning for next batch if needed.

While oysters fry, make the remoulade: in a medium bowl whisk together 1/2 cup mayonnaise, 1 tbs mustard, 1 tsp prepared horseradish, 1 tbs lemon juice, 1 tsp Worcestershire sauce and 1 tsp hot sauce. Stir in chopped capers, 2 tbs parsley, and the thinly sliced green onions. Season with 1/4 tsp kosher salt and 1/8 tsp black pepper. Taste and adjust acidity or heat to preference. Chill until assembly.

Remove warmed loaf from oven and open it. Spread a generous layer (about 1/3–1/2 cup) of remoulade along the bottom interior of the loaf. Arrange lettuce leaves (if using) along the sauce to create a barrier so the bread doesn’t get soggy.

Place the fried oysters in a single even layer along the length of the loaf. Spoon additional remoulade over the oysters (about 1/4 cup) and scatter sliced pickled banana peppers and tomato slices, if using. Sprinkle a few extra chopped parsley and scallion for freshness.

Leftover tips: Store fried oysters and remoulade separately in the refrigerator up to 24 hours. Re-crisp oysters on a baking sheet in a 375°F (190°C) oven for 6–8 minutes before assembling.
