    Prepare kiwano puree

    Halve the kiwano melon and scoop out the pulpy flesh into a fine-mesh sieve set over a bowl. Press with the back of a spoon to extract about 1 oz (30 ml) of bright orange-green juice/puree. Discard seeds and thicker membranes. If your kiwano is particularly seedy, briefly pulse in a blender and strain to yield a smoother puree.

    Measure and chill glass: place a Collins or highball glass in the freezer for a few minutes or fill with ice water while you mix to keep the cocktail cold.

Build & Mix

    Shake the base

    In a cocktail shaker, combine 2 oz gin, 1 oz kiwano puree, 0.5 oz fresh lime juice, and 0.5 oz simple syrup. Fill the shaker with the 6 ice cubes (for shaking). Secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

    Strain

    Discard ice or water from the chilled serving glass and add 4 fresh ice cubes. Double-strain the shaken mixture (using a Hawthorne strainer and a fine mesh strainer) into the prepared glass to remove any pulp or small seed fragments.

    Top with sparkle

    Gently top the cocktail with 2 oz sparkling water. Give a gentle stir (1–2 slow turns) to integrate the bubbles without flattening them.

Garnish & Serve

    Garnish the rim or surface with a small slice or wedge of kiwano (or a thin half-moon if you used a quarter), float a lime wheel on top, and tuck a mint sprig into the side. Serve immediately with a short straw so the drinker can enjoy aroma from the mint and the delicate kiwano top notes.

    Optional: if you prefer sweeter, add another 0.25 oz simple syrup before topping with sparkling water; for a more botanical sip, increase gin to 2.25 oz and reduce sparkling water to 1.5 oz.
