Cake Preparation

1

Make the Red Velvet Cake

Preheat the oven to 350°F (175°C). Grease and flour a small cake pan. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt. In another bowl, whisk together the oil, buttermilk, egg, food coloring, vanilla, and vinegar. Combine the wet and dry ingredients and mix until just combined. Pour into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.

Cream Cheese Gelato Preparation

2

Prepare the Cream Cheese Gelato

In a mixing bowl, beat cream cheese until smooth. In another bowl, whisk together heavy cream, milk, sugar, vanilla, and salt. Fold the cream mixture into the cream cheese until well combined. Freeze in an ice cream maker according to manufacturer instructions until smooth and creamy.

Cocoa Nib Streusel Preparation

3

Make Cocoa Nib Streusel

In a bowl, mix together flour, brown sugar, cocoa nibs, butter, and salt until crumbly. Spread on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until crisp.

Raspberry Consommé Preparation

4

Prepare Raspberry Consommé

In a saucepan, combine raspberries, sugar, and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Strain through a fine sieve to remove seeds.

Buttercream Preparation

5

Make White Chocolate Buttercream

In a bowl, beat butter until creamy. Gradually add powdered sugar, mixing well. Stir in melted white chocolate and vanilla until smooth.

Butterscotch Preparation

6

Prepare Chestnut Honey Butterscotch

In a saucepan, melt butter over medium heat. Add brown sugar, cream, chestnut honey, and salt. Stir continuously until the mixture thickens, about 5-7 minutes. Allow to cool slightly before serving.
