Prepare the Ingredients

Start by gathering all ingredients. Thinly slice the fennel and chop the dill.

Cook the Saffron Linguine

In a large pot of salted boiling water, cook the saffron linguine according to package instructions. Drain and set aside, reserving a little pasta water.

Sear the Salmon

Heat olive oil in a large skillet over medium-high heat. Season the king salmon fillets with salt and black pepper. Place the fillets skin-side down in the hot skillet. Sear for about 4-5 minutes until the skin is crispy.

Add Prawns and Fennel

Carefully flip the salmon fillets and add the prawns and sliced fennel to the skillet. Cook for an additional 3-4 minutes, until the prawns are pink and cooked through.

Combine with Linguine

Add the cooked saffron linguine to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.

Finish with Creme Fraiche and Dill

Remove the skillet from heat. Stir in the creme fraiche and chopped dill. Taste and adjust seasoning with more salt and pepper if needed.

Serve

Plate the saffron linguine with prawns and the pan-roasted king salmon on top. Garnish with lemon wedges and extra dill if desired.
