Preparation and Serving
Prepare the Mignonette
Finely dice the D’Anjou pear and shallot. In a small bowl, combine the diced pear, shallot, and red wine vinegar. Season with freshly cracked black pepper to taste. Mix well and let sit for at least 15 minutes to allow the flavors to meld.
Prepare the Oysters
Shuck the Pacific oysters, being careful to keep the oyster liquor in each shell. Arrange the oysters on a platter filled with crushed ice to keep them cold.
Serve
Spoon a small amount of the D’Anjou pear mignonette over each oyster. Serve immediately and enjoy!
