Method

Steak Preparation

1

Prepare the Steak

Rub the Mishima Wagyu Teres Major Steak with olive oil, salt, and black pepper. Let it marinate for at least 30 minutes.

2

Chargrill the Steak

Preheat the grill to high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Let rest for 5 minutes before slicing.

Truffled Béarnaise Preparation

3

Make the Reduction

In a saucepan, combine chopped shallots, white wine vinegar, and dry white wine. Reduce over medium heat until mixture is syrupy. Strain and let cool.

4

Prepare the Sauce

Whisk egg yolks in a bowl over a double boiler. Gradually add melted butter while whisking continuously until thickened. Stir in the truffle oil, tarragon, and season with salt and pepper.

Robuchon Potatoes Preparation

5

Boil the Potatoes

Peel and cut Yukon Gold potatoes into equal-sized pieces. Boil in salted water until tender, about 15 minutes.

6

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth. Season with salt to taste.

Wood-Roasted French Beans Preparation

7

Prepare the Beans

Toss French green beans with olive oil, minced garlic, and salt. Spread on a baking sheet.

8

Roast the Beans

Roast in a preheated oven at 400°F (200°C) for about 15-20 minutes or until tender and slightly blistered.
