Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil then reduce heat and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, gently fold the vinegar mixture into the rice. Let cool to room temperature.

Prepare Fillings

    Slice the Fillings

    Thinly slice the salmon, cucumber, and avocado into strips.

Assemble Sushi Rolls

    Lay Out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Rice

    Wet your hands and grab a handful of sushi rice. Spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place slices of the salmon, cucumber, and avocado in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Plate and Serve

    Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
