Method
Prep
If using fresh corn, remove kernels from 4 ears; reserve about 1/2 cup of kernels for garnish and set aside. Measure and prep vegetables and aromatics.
Tie thyme sprigs and bay leaf together with kitchen twine or put in a small piece of cheesecloth for easy removal.
Make the Bisque Base
Cook corn and thicken
Add 3.5 cups of the corn kernels to the pot and stir to combine. Cook 4–5 minutes until corn releases some moisture and begins to soften. Sprinkle the 2 tbs flour over the mixture and stir for 1–2 minutes to remove the raw flour taste.
Add liquid and simmer
Slowly pour in the 4 cups stock while stirring to prevent lumps. Add the thyme/bay bundle, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp sugar if using. Bring to a gentle simmer, reduce heat to maintain a low simmer, and cook uncovered for 12–15 minutes to marry flavors and fully cook the corn.
Finish with dairy
Remove and discard the thyme/bay bundle. Stir in the 1 cup whole milk and 1/2 cup heavy cream and warm through for 3–4 minutes—do not boil hard once dairy is added to prevent curdling. Adjust seasoning to taste.
Texture & Blend
Optional strain for silky texture
For a restaurant-style bisque, pass the blended soup through a fine-mesh sieve into a clean pot, pressing gently to extract as much liquid and flavor as possible. Discard solids.
Reheat gently over low heat. Stir in 1 tsp smoked paprika if using, and 1 tsp lemon juice. Taste and adjust salt and pepper.
Crisp Corn Garnish (take-out friendly)
Add the corn to the hot skillet in a single layer and allow to brown without stirring for 1–2 minutes, then toss occasionally until golden and slightly crisp, about 4–6 minutes total. Remove from heat and let cool.
If making for take-out, allow crisp corn to cool completely on a paper towel-lined plate before packaging separately (in a small sealed cup) to maintain crunch.
Finish & Serve (or pack for take-out)
Ladle the bisque into bowls or hot-safe take-out containers, leaving a small headspace. Drizzle a little olive oil over each portion, sprinkle with sliced chives, and place the crisp corn garnish in a separate sealed condiment cup for take-out. If serving immediately, scatter a few crisp kernels on top.
Estimated yield: about 6 servings (6 x ~1 cup). Reheat gently on low; do not boil after dairy added. Store leftover soup refrigerated up to 3 days.
