Prepare peppers

Rinse the cayenne peppers and pat dry. Remove stems; leave seeds if you want maximum heat, or shake out some seeds for milder sauce. Roughly chop peppers.

Simmer

In a small saucepan combine chopped peppers, peeled garlic cloves, distilled white vinegar, and water. Bring to a gentle simmer over medium heat, reduce heat to low and simmer uncovered for 8–10 minutes until peppers are softened and color brightens. Stir occasionally.

Blend

Carefully transfer the hot pepper-vinegar mixture to a blender (or use an immersion blender in the pot). Add kosher salt and sugar. Blend on high until completely smooth, about 45–60 seconds. If mixture is very thick, add up to 2 tablespoons hot water to reach your desired consistency.

Strain (optional)

For a classic smooth Louisiana-style finish, strain the blended sauce through a fine-mesh sieve into a bowl, pressing solids with the back of a spoon to extract liquid. Discard solids (or reserve for another use).

Adjust flavor & texture

Return strained or unstrained sauce to the saucepan and heat gently for 1–2 minutes to meld flavors. Taste and adjust: add smoked paprika for a smoky note, lime juice for brightness, or an extra 1/4–1/2 tsp salt or sugar to balance acidity. If sauce is too sharp, whisk in 1 tsp olive oil to round mouthfeel.

Bottle & rest

Allow sauce to cool slightly, then transfer to a clean bottle or jar. Refrigerate at least 24 hours before heavy use to let flavors meld; flavor will mature over several days. Keeps refrigerated up to 6 months (vinegar-based).

Application suggestion

Shake well before using. Apply sparingly to meats; sauce is thin and tangy—brush onto grilled or smoked meats in the last few minutes of cooking for glaze, or serve as table sauce for customers to request on their meats.
