Method
Dry Rub
Mix Rub
In a medium bowl, combine brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, dry mustard, and cayenne (if using). Whisk thoroughly to break up any brown sugar lumps and ensure an even blend.
Chicken
Prep Chicken
Pat the chicken pieces dry with paper towels. If using a whole chicken, spatchcock (remove backbone and flatten) or truss as preferred. Rub the olive oil evenly over the chicken to help the dry rub adhere.
Apply Rub
Generously sprinkle and press the dry rub over all surfaces of the chicken, including under the skin where possible. For best flavor, place rubbed chicken on a tray, cover, and refrigerate for at least 1 hour or up to overnight to let the flavors penetrate.
Bring to Temperature
Remove chicken from the refrigerator 30 minutes before cooking to come toward room temperature for more even cooking.
Smoking / Grilling / Oven Roasting
Cook Low and Slow
Place chicken skin-side up on the grate or a rack. Close the lid or oven door and cook at low heat until the internal temperature in the thickest part of the thigh reaches 165°F (74°C). For bone-in pieces this typically takes 1.5–2 hours at 250–300°F; whole spatchcocked chicken may take 1–1.5 hours depending on size. Start checking temperature after 60 minutes.
Mop/Baste
While cooking, combine mop ingredients in a small bowl. Every 20–30 minutes beginning about 30 minutes into the cook, lightly baste or mop the chicken with the mixture to add moisture and tangy flavor. Do not over-baste; a light application is enough.
Finishing Sauce (Optional)
Glaze
If using a finishing glaze, warm the BBQ sauce, honey, and butter in a small saucepan over low heat until combined. Brush the glaze onto the chicken during the last 10 minutes of cooking, flipping pieces once and glazing both sides so sauce sets but does not burn.
Rest and Serve
Rest
Remove chicken from the heat and tent loosely with foil. Rest 10–15 minutes for juices to redistribute. Check final internal temperature — it should be at least 165°F (74°C) in the thickest part.
