Prep
Prepare produce and bacon
Wash and pat dry lettuce leaves. Slice the tomato into 6 even slices (about 1/4 inch / 6 mm thick). Cook bacon until crisp (pan-fry over medium heat 8–10 minutes, or bake at 400°F/200°C for 15–18 minutes); drain on paper towels. Let bacon cool slightly, then halve each strip crosswise if desired for easier stacking.
If bread will be toasted, preheat a skillet or toaster. Lay out 6 slices of bread on a clean work surface.
Assemble sandwich
Toast bread (optional)
If toasting, lightly toast all 6 slices until golden; this helps prevent sogginess and adds structure for the double-decker stack.
Spread mayo
Spread about 1 tablespoon of mayonnaise evenly on one side of three of the bread slices (these will be the top of each layer). Spread the remaining 1 tablespoon thinly on the other three slices to ensure even moisture and flavor throughout the sandwich.
First layer (bottom)
Place one slice of mayo-spread bread mayo-side-up on your work surface. Top with 3 slices of turkey arranged evenly to cover the bread. Add one lettuce leaf (or tear to fit) on top of the turkey. Add 2 slices of tomato, sprinkle with a pinch (~1/8 tsp) of salt and a light grind (~1/8 tsp) of black pepper.
Middle slice
Place a second slice of bread, mayo-side-down, on top of the tomato to create the first deck. On top of that middle bread slice (mayo-side-up if you spread both sides), layer 3 more slices of turkey, then 3 strips of bacon (arranged to overlap slightly).
Top layer
Add the final slice of bread (mayo-side-down) to complete the double-decker. Press down gently to compact the sandwich uniformly.
Finish and serve
Using a serrated knife, cut the sandwich diagonally into two triangles (or into thirds if preferred). If serving with a pickle spear and chips, plate them alongside. Secure each half with a toothpick if desired to keep layers intact. Serve immediately.
Notes
Adjust quantities per bread choice or customer preference (extra bacon or turkey). For a lighter version, use low-fat mayo or avocado spread. For best texture, assemble just before serving so tomatoes don't make the bread soggy.
