Preheat and prepare
Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly grease them. Position racks so air can circulate.
Wash and cut
Wash and scrub the sweet potatoes. Peel them if you prefer (leaving the skin on adds texture). Cut the potatoes into 1/4- to 1/2-inch thick fries: first slice lengthwise into 1/2-inch slabs, then stack and cut into sticks. Aim for even sizes for uniform cooking.
Soak and dry
Optional but recommended: place the cut fries in a bowl of cold water and soak for 20–30 minutes to remove excess starch (this yields crisper fries). After soaking, drain and pat completely dry with clean kitchen towels or paper towels. Excess moisture prevents crisping.
Coat fries
In a large bowl, toss the dried sweet potato sticks with cornstarch until lightly dusted and mostly even. Add olive oil and toss to coat. In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, and cayenne; sprinkle over the fries and toss to evenly distribute the seasonings.
Arrange and space
Spread the fries in a single layer on the prepared baking sheets, making sure they are not touching or crowded. Use two sheets if needed to maintain space for airflow. Overcrowding causes steaming and soggier fries.
Bake and flip
Bake for 20 minutes, then remove trays and flip each fry or shake the pan to turn them. Rotate the pans between racks if using two. Return to the oven and bake another 10–15 minutes until edges are browned and crisp-tender (total baking time ~30–35 minutes depending on thickness). Keep an eye the last 5 minutes to prevent burning.
Finish
When fries are done, transfer to a cooling rack or a plate lined with paper towels. Immediately sprinkle with chopped parsley and optional grated parmesan while hot so the cheese melts slightly. Adjust seasoning with a pinch more salt if needed.
Dipping Sauce (optional)
In a small bowl, combine mayonnaise, ketchup, hot sauce, lemon juice, and salt. Whisk until smooth. Taste and adjust hot sauce or lemon for more tang. Chill until ready to serve.
