Pepper Cheese Filling
Prepare filling
In a large mixing bowl, add the softened cream cheese. Using a rubber spatula or electric hand mixer on low, beat cream cheese until smooth and lump-free (about 1–2 minutes by mixer, 3–4 minutes by hand).
Add the grated sharp cheddar and monterey jack cheeses to the bowl. Fold together with the cream cheese until evenly combined.
Stir in the roasted red bell pepper (finely chopped), minced jalapeño (taste first; include seeds if you want more heat), and sliced green onions. Mix until distributed evenly.
Season the mixture with garlic powder, smoked paprika, kosher salt, black pepper, and chopped parsley (if using). Taste and adjust salt/pepper or jalapeño heat as desired.
Cover the bowl and refrigerate the filling for at least 30 minutes — this firms the mixture and makes it easier to shape into bites.
Forming & Coating
Line a rimmed baking sheet with parchment paper or plastic wrap. Remove the chilled filling from the refrigerator.
Using a tablespoon or a small cookie scoop (about 1 tablespoon per bite), portion the filling and roll between your palms to form compact 1-inch to 1 1/4-inch balls. Place each formed ball on the prepared sheet. You should get about 30–36 bites depending on size.
Frying (or Baking) & Finishing
To fry: Pour vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1/2 inch. Heat oil over medium-high heat until it reaches 350°F (175°C) or until a pinch of panko sizzles on contact. Fry bites in batches, 3–5 minutes total, turning occasionally, until golden brown and heated through. Do not overcrowd. Transfer to a paper towel-lined plate to drain.
To bake (lighter option): Preheat oven to 425°F (220°C). Place coated bites on a parchment-lined baking sheet. Lightly spray each with oil spray. Bake for 12–16 minutes, turning once halfway, until golden and crisp. Baking may require a couple extra minutes to ensure interior is warm and cheese melted.
After cooking, let bites rest 2–3 minutes, then transfer to a serving platter. Garnish with chopped cilantro or parsley and serve with lime wedges.
If any bites break while cooking and release cheese, drain and wipe skillet before continuing to avoid sticking and burning.
Optional Dipping Sauce
While fillings chill or bites cook, whisk together sour cream, mayonnaise, hot sauce, lime juice, and salt in a small bowl. Chill until serving. Adjust hot sauce and lime to taste.
Serve sauce alongside warm pepper cheese bites for dipping.
