Prepare beans

Trim the stem ends of the green beans and rinse under cold water. Pat dry thoroughly with kitchen towels; excess moisture will make the batter soggy.

Heat oil

Pour vegetable oil into a deep pot or large skillet to a depth of about 1.5 to 2 inches (about 3–5 cm). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise immediately.

Make batter

In a large bowl whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp fine sea salt, 1/2 tsp black pepper, 1/2 tsp sugar, 1 tsp onion powder and 1/2 tsp garlic powder. If using the egg, beat it lightly in a small bowl and stir into the dry mix. Gradually add 1 cup cold sparkling water while whisking gently until you have a smooth, slightly thick batter that coats the back of a spoon. Keep the batter cold — place the bowl over another bowl filled with ice if needed.

Dredge and batter

Lightly dredge small handfuls of the dry, trimmed green beans in a little extra flour (tap off excess). This helps the batter adhere. Working in batches, dip the floured beans into the cold batter, ensuring an even coat and letting excess drip back into the bowl.

Fry beans

Carefully add battered beans to the hot oil in a single layer without overcrowding — about 8–12 beans per batch depending on pot size. Fry until golden and crisp, 2½–3½ minutes, turning once with a slotted spoon or spider. Adjust heat as needed to maintain 325–350°F (160–175°C).

Drain and season

Use a slotted spoon to remove the beans to a paper towel–lined baking sheet or wire rack set over a sheet pan. Immediately sprinkle lightly with a pinch of salt. Keep finished batches warm in a low oven (200°F / 95°C) on the rack while you fry remaining beans.

Slice and coat onion

Peel the yellow onion and cut into very thin slices or rings (use a mandoline if available). Separate into rings or strips. Toss the onion slices with 1/4 cup flour, 1/2 tsp salt and 1/4 tsp black pepper to lightly coat.

Fry onion crisps

When oil is at 350°F (175°C), fry small handfuls of the coated onion slices in the hot oil until golden brown and crisp, about 1–2 minutes. Work quickly — onion crisps cook faster than the beans. Remove with a slotted spoon and drain on paper towels. Break into smaller pieces if desired.

Finish

Scatter the crisped onion pieces over the warm battered green beans. Sprinkle optional chopped parsley for color and a fresh note.

Whisk together 1/4 cup mayonnaise, 1/4 cup sour cream or Greek yogurt, 1 tsp lemon juice, 1/2 tsp hot sauce, 1/8 tsp salt and 1/8 tsp black pepper until smooth. Adjust seasoning to taste and chill until ready to serve.
