Protein - Seasoned Beef

Cook aromatics

Heat a large skillet or sauté pan over medium-high heat. Add 1 tbs vegetable oil. When hot, add the diced onion and cook 3–4 minutes until softened and translucent. Add minced garlic and cook 30 seconds until fragrant.

Brown beef

Increase heat to medium-high. Add the ground beef, breaking it up with a spatula. Cook until no longer pink, about 6–8 minutes, and any moisture has mostly evaporated.

Season and simmer

Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Add tomato paste and stir to coat the beef. Pour in beef broth (or water) and reduce heat to medium-low. Simmer, stirring occasionally, until mixture is thickened and well combined, about 6–8 minutes. Taste and adjust salt or spices. Stir in lime juice if using. Keep warm in a low oven (200°F / 95°C) or transfer to a covered hotel pan for service.

Marinate chicken (quick)

In a large bowl combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and lime juice. Add the cut chicken pieces and toss to coat. Let sit at room temperature for 15–20 minutes (or refrigerate up to 2 hours).

Cook chicken

Heat a large skillet or griddle over medium-high heat. Add a thin film of oil if needed. Add the marinated chicken in a single layer (work in batches if necessary) and cook undisturbed 3–4 minutes to sear, then stir and cook another 3–4 minutes until internal temperature reaches 165°F (74°C) and pieces are browned. Transfer to a warm holding pan and keep covered until service.

Cheeses & Dairy

Shred the sharp cheddar if not pre-shredded and transfer to a serving bowl. Chill the sour cream and place in a serving bowl with a small serving spoon. Keep refrigerated until ready to set on the taco bar; replenish as needed.

Fresh Veggies & Toppings

Shred the lettuce and place in a shallow pan or bowl. Core, seed, and dice tomatoes and place in a separate bowl. Chop cilantro and place in a small bowl. Cut limes into wedges and arrange on a plate. Place pickled jalapeños and warmed black beans (if using) in serving containers.

Tortillas & Chips

Wrap tortillas in foil and warm in a 300°F (150°C) oven for 10–15 minutes before service, or steam on a covered pan. Keep wrapped so they stay soft. Place tortilla chips in a large bowl or in portions for guests.

Salsa & Condiments

Transfer salsa to a serving bowl and place hot sauce nearby. Provide serving spoons and label containers if offering mild/medium/hot options.

Assembling & Service

Set up the taco bar with warmed tortillas and chips at one end. Place containers of seasoned beef and seasoned chicken on heated risers or in chafing pans to keep hot. Arrange bowls of shredded cheddar, sour cream, salsa, lettuce, tomatoes, cilantro, jalapeños, beans, and lime wedges in a logical order. Provide serving spoons, tongs, plates, napkins, and utensils.

Suggested assembly for guests: warm a soft shell, add 2–3 tbs of beef or chicken, top with 1–2 tbs shredded cheddar, 1–2 tbs diced tomato, 1–2 tbs shredded lettuce, 1 tsp sour cream, and salsa to taste. Squeeze lime and garnish with cilantro or pickled jalapeños as desired.

Keep replenishing trays every 30–45 minutes during the 2-hour service to maintain freshness and temperature. Discard perishable toppings after service window.
