Combine base ingredients

In a small bowl or a jar with a tight lid, add red wine vinegar, Dijon mustard, honey and finely minced garlic. Whisk briefly or close the jar and shake to combine until the mixture is uniform.

Emulsify

While whisking constantly, slowly drizzle in the extra-virgin olive oil until the dressing thickens slightly and becomes glossy. If using a jar, add the oil, seal, and shake vigorously for 20–30 seconds.

Season

Stir in sea salt and freshly ground black pepper. Taste and adjust seasoning — add a pinch more salt or a little more honey if you prefer sweeter, or an extra 1/2 tsp vinegar for more acidity.

Add fresh herbs and brightness

If using, stir in the chopped parsley and chives along with the lemon juice for added freshness. Mix thoroughly so herbs are evenly distributed.

Finish (optional)

For a richer, savory note, whisk in the grated Parmesan. Let the dressing rest 5–10 minutes at room temperature to allow flavors to meld before serving.

Store any leftover dressing in a sealed container in the refrigerator for up to 7 days. Bring to room temperature and shake or whisk before using, as the oil may solidify slightly when chilled.
