Prepare bacon

Preheat a large skillet over medium heat. Lay 4 bacon strips in a single layer without overlapping. Cook 3–4 minutes per side, turning occasionally, until deep golden brown and crisp. Adjust heat if bacon is browning too quickly. Transfer bacon to a plate lined with paper towels to drain and keep warm.

Prepare tomato

While the bacon cooks, slice the tomato into 1/4-inch thick slices. Place slices on a plate and sprinkle evenly with 1/4 tsp salt and 1/8 tsp black pepper; set aside to draw flavor.

Toast bread or warm tortilla/pita

Choose your starch: For bread, butter one side of each slice lightly (about 1/2 tsp each) and toast in a skillet over medium heat or in a toaster until golden and crisp. For pita, warm in a dry skillet 30–45 seconds per side or wrap in foil and heat at 350°F (175°C) for 5–7 minutes. For a grilled tortilla, warm in a dry skillet until pliable and slightly charred (about 20–30 seconds per side). Remove and place on cutting board.

Assemble sandwich

Spread 1 tablespoon mayonnaise evenly over the interior of each slice of toasted bread (or on the inside of the pita or on one side of the warmed tortilla). On the bottom slice (or base), place 1–2 lettuce leaves, then overlap tomato slices to cover the bread, then place the 4 strips of crispy bacon over the tomatoes. If using a tortilla, fold or roll to enclose; for pita, tuck fillings inside pocket; for bread, top with the remaining mayo-spread slice. Press gently to compress.

Finish and serve

If desired, trim sandwich diagonally and secure with toothpicks. Serve immediately while bacon is still warm so bread remains crisp. Offer extra mayo or ketchup on the side if desired.
