Prepare Dough & Preheat
Preheat oven
Place a pizza stone or an inverted baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. If using a home oven that doesn't reach 500°F, preheat to the highest temperature available (475–500°F).
Brush the dough lightly with 1 tablespoon olive oil, especially the outer rim, to help it brown.
Sauce & Seasoning
In a small bowl, combine the BBQ sauce (3 tbs) with garlic powder (1 tsp), smoked paprika (1 tsp), salt (1 tsp), and black pepper (1/2 tsp). Mix until smooth and well incorporated. Taste and adjust seasoning if desired.
Spread the seasoned BBQ sauce evenly over the prepared dough, leaving a 1/2-inch border for the crust.
Toppings & Assembly
Distribute half of the shredded mozzarella (1 cup) over the sauced dough to create a cheese base that prevents sogginess.
Scatter the sliced or shredded grilled chicken evenly across the pizza (about 2 cups). If the chicken is plain, toss it briefly with 1 tablespoon additional BBQ sauce before adding for extra flavor.
Evenly spread the remaining mozzarella (1 cup) over the chicken, then top with the thinly sliced green peppers (1/2 cup) and thinly sliced onion (1/2 cup). Sprinkle red pepper flakes (1/4 tsp) if using.
Bake & Finish
Carefully transfer the assembled pizza to the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. Baking time may vary depending on oven and thickness of crust.
If desired, for a slightly caramelized finish, switch to broil for the last 45–60 seconds—watch closely to avoid burning.
Remove the pizza from the oven and let rest for 2–3 minutes. Drizzle 1 additional tablespoon of BBQ sauce in a zigzag over the top if you like a more pronounced BBQ flavor.
Garnish with chopped fresh cilantro (2 tbs) and slice into 6–8 pieces. Serve hot.
