Combine base ingredients
In a medium mixing bowl, whisk together 1 cup mayonnaise and 1/2 cup sour cream until smooth and homogenous.
Thin and flavor
Whisk in 1/2 cup buttermilk until the mixture reaches a pourable but still creamy consistency. Add 1 tablespoon white wine vinegar, 1 teaspoon fresh lemon juice, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon Dijon mustard, and 1/2 teaspoon finely minced garlic. Whisk until fully incorporated.
Season
Season the dressing with 1/2 teaspoon coarse salt and 1/2 teaspoon freshly ground black pepper. Taste and adjust salt, pepper, or lemon to preference.
Add bleu cheese and finish
Fold in 3/4 cup crumbled bleu cheese using a rubber spatula, leaving some slightly larger crumbles for texture. If you prefer a smoother dressing, mash 1/4–1/2 of the crumbles with the back of a spoon or a fork before folding in. Stir in 1 tablespoon minced fresh chives, if using.
Rest and store
Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld (1–4 hours is better). The dressing will thicken slightly as it chills. If it becomes too thick, whisk in additional buttermilk 1 tablespoon at a time until desired consistency is reached. Keeps in an airtight container in the refrigerator for up to 5 days.
