Brine

In a bowl, combine 1 cup buttermilk with 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Add the 10 oz chicken pieces, cover, and refrigerate for at least 30 minutes (up to 4 hours).

Prepare Dredge

In a shallow dish, whisk together 3 tbs all-purpose flour, 1 tbs cornstarch, 1/2 tsp baking powder, 1/2 tsp paprika, 1/2 tsp garlic powder, and remaining 1/2 tsp salt and 1/2 tsp black pepper.

Coat

Remove chicken from buttermilk, allowing excess to drip off. Dredge pieces thoroughly in the flour mixture so each piece is evenly coated. Let rest on a wire rack for 5 minutes to set the coating.

Fry

Heat 1 cup vegetable oil in a heavy skillet or a small deep pot to 350°F (175°C). Fry the coated chicken in batches (do not overcrowd) for 3–4 minutes, turning as needed, until golden brown and internal temperature reaches 165°F (74°C). Drain on a paper towel-lined plate or wire rack.

Toss with Sauce

Place the hot fried boneless wings in a bowl. Add 2 tbs of your chosen sauce (buffalo, BBQ, mustard BBQ, Nashville, mango habanero BBQ, or hot honey maple). Toss gently until wings are evenly coated. For 'naked', skip this step.

Vegetable Garnish

Cut 3 carrots and 3 celery sticks into 3- to 4-inch sticks each if not pre-cut. Arrange on the plate alongside the wings. These are meant to be crisp and fresh; keep refrigerated until serving.

Ranch Dressing

Place 1/4 cup prepared ranch dressing in a small ramekin. Serve chilled alongside the wings and vegetables for dipping.

Sauce Options (choose one)

Buffalo

Use 2 tbs buffalo sauce (hot sauce + melted butter). Toss wings immediately after frying to coat.

BBQ

Use 2 tbs BBQ sauce. Warm slightly if desired, then toss wings to coat evenly.

Mustard BBQ

Use 2 tbs mustard-style BBQ sauce. Toss wings to coat; adjust amount to taste.

Nashville

Use 2 tbs Nashville hot sauce (chili oil mix). Toss wings and, if desired, brush an extra drizzle of hot oil on top for extra heat.

Mango Habanero BBQ

Use 2 tbs mango habanero BBQ sauce. Warm slightly and toss wings to coat; this is sweet and spicy.

Hot Honey Maple

Combine 1.5 tbs honey with 0.5 tbs maple syrup and a dash of hot sauce; toss wings in 2 tbs of this mixture for a sweet-spicy glaze.

Naked

Do not add sauce. Serve wings plain with ranch on the side.
