Crack the 6 large eggs into a medium bowl. Add 3 tbsp whole milk, 1 tsp salt, and 1 tsp fresh black pepper. Whisk vigorously until the mixture is homogeneous and slightly frothy (about 20–30 seconds). Stir in the chopped chives and parsley.

Cook gently

Heat a nonstick skillet over medium-low heat. Add 1 tbsp unsalted butter and let it melt, swirling to coat. Pour in the egg mixture. Allow eggs to sit undisturbed 10–15 seconds until edges begin to set. Using a silicone spatula, gently push cooked edges toward the center while tilting the pan to let uncooked egg run to the edges. Continue folding every 10–15 seconds until eggs are mostly set but still soft and slightly glossy (about 2–3 minutes total). Remove from heat; residual heat will finish cooking. In a large sauté pan over medium-high heat, add 2 tbsp olive oil and 1 tbsp butter. When butter foams, add the diced yellow onion and cook 3–4 minutes until translucent. Stir in 2 minced garlic cloves and cook 30 seconds until fragrant. Add the par-cooked potatoes in a single layer as much as the pan allows (work in batches if needed). Sprinkle 1 tsp smoked paprika, 1 tsp dried thyme, 1 tsp salt, and 1 tsp black pepper over the potatoes. Let potatoes cook undisturbed 3–4 minutes to form a crust, then flip pieces and continue cooking another 3–4 minutes until golden and crisp. Toss occasionally for even browning, total crisping time about 8–12 minutes. Transfer to a plate and sprinkle with 1 tbsp chopped fresh parsley.

In a bowl combine 1 lb ground turkey, 1 tbsp maple syrup, 1 tsp Dijon mustard, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp kosher salt, and 1/2 tsp black pepper. Mix gently until just combined — overworking makes patties dense. Divide into 8 equal portions and form into 1/2-inch-thick patties (about 2.5–3 inches diameter).

Cook patties

Heat a large skillet over medium heat and add 1 tbsp olive oil. When oil shimmers, add patties (do not overcrowd). Cook 4–5 minutes on the first side without moving to achieve a golden crust. Flip and cook another 3–4 minutes, or until internal temperature reaches 165°F (74°C). If patties brown too quickly, reduce heat to medium-low. Transfer to a plate and tent loosely with foil to keep warm.
