Prepare jalapeños

Wash jalapeños and pat dry. Wearing gloves (recommended), slice each jalapeño lengthwise in half. Use a small spoon to remove seeds and membranes if you want milder poppers; leave some membranes/seeds for extra heat. Pat the inside dry with a paper towel.

Make cheese filling

In a medium bowl, combine softened cream cheese, grated sharp cheddar, grated mozzarella, minced garlic, chopped cilantro, 1/2 tsp salt, and 1/4 tsp black pepper. Mix with a spatula until smooth and homogenous. Taste and adjust seasoning as desired.

Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, mound slightly but avoid overfilling so filling stays contained during breading and frying. Place filled jalapeños on a tray and refrigerate for 15–20 minutes to firm the filling (this helps prevent leakage while frying).

Set up breading stations

Arrange three shallow bowls or dishes: 1) flour (1 cup) seasoned with 1/2 tsp salt and 1/2 tsp paprika — stir to combine; 2) beaten eggs (2 eggs + 2 tbsp milk) whisked until homogenous; 3) panko breadcrumbs (1.5 cups) mixed with cornmeal (1/4 cup) if using.

Working with chilled jalapeños, dredge each stuffed half in seasoned flour, shaking off excess. Dip into the beaten egg mixture, allowing excess to drip off. Press into the panko mixture to coat thoroughly, pressing gently so breadcrumbs adhere well. For extra-crispy double coating, return the popped to egg and breadcrumbs again. Place breaded poppers on a plate or tray and refrigerate 10 minutes to help set the coating.

Frying & Finishing

Heat oil

Pour about 2–3 cups of neutral oil into a deep, heavy skillet or Dutch oven so it is 1–1.5 inches deep. Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and brown in about 45–60 seconds.

Fry poppers in batches (do not overcrowd) for 2.5–4 minutes per batch, turning occasionally, until golden brown and crispy. Monitor the oil temperature and adjust heat to keep it around 325–350°F so the coating browns without burning and the filling heats through. Use a slotted spoon or spider to transfer fried poppers to a wire rack or paper towel–lined plate to drain excess oil.

Let poppers rest 2–3 minutes (filling will be very hot). Garnish with cilantro leaves and serve with lime wedges or your favorite dipping sauce (ranch, chipotle mayo).

Safety note

Allow poppers to cool slightly before eating to avoid burning from hot cheese. Dispose of used oil properly once cooled.
