Method
Prep & Cook Chicken (if using precooked chicken, skip to Step 4)
Season and cook chicken
If your chicken is raw, pat 10 oz chicken breast dry. Toss with 1 tbsp olive oil, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp salt and 1/4 tsp black pepper. Heat a skillet over medium-high heat and cook chicken 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F / 74°C. Remove from heat and let rest 5 minutes, then slice into strips or dice into bite-sized pieces.
If using precooked chicken (rotisserie or leftover), slice into strips or shred to about 10 oz total and toss lightly with 2–3 tbsp bbq sauce so the chicken is slightly sauced and not dry.
Prepare Vegetables & Cheese
Thinly slice 1/2 cup red onion (about 1/4 of a large onion), and 1/2 cup green bell pepper. Seed and dice 1 medium tomato, removing excess liquid and seeds so the pizza won't get soggy. Thinly slice 2 green onions across the white and green parts. Combine 1.5 cups shredded mozzarella and 1/2 cup shredded cheddar in a bowl and set aside.
Preheat & Prep Crust
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Lightly dust your work surface with 1 tbsp flour and stretch/roll the dough into a 12-inch round. Transfer dough to a piece of parchment paper or a lightly oiled pizza peel/pan. Brush the outer 1/2-inch of the crust with 1 tbsp olive oil for a golden edge.
Assemble Pizza
Spread 1 cup bbq sauce evenly over the dough, leaving a 1/2-inch border for the crust. Sprinkle half of the mozzarella/cheddar mixture evenly over the sauce to create a base layer of cheese.
Distribute the chicken pieces (10 oz) evenly across the pizza. Scatter the thinly sliced red onion, green pepper, and diced tomato over the chicken. Reserve the green onions to add later so they stay bright and fresh.
Top with the remaining shredded cheese, ensuring even coverage so ingredients meld as the cheese melts. If you like heat, sprinkle 1/4 tsp red pepper flakes evenly.
Bake & Finish
Remove pizza from oven and immediately scatter the thinly sliced green onions and optional chopped cilantro/parsley over the top. Let the pizza rest 2–3 minutes for the cheese to set slightly, then slice into 8 pieces.
Serve hot. Offer extra bbq sauce on the side if desired.
